There are two species of Hedgehog mushroom Hydum umbilicatum and Hydum repandum (basically small and large). They are slow growing mushrooms that grow during various seasons depending on which coast. Hedgehogs are a unique mushroom in that they have a smooth orangey cap with furry teeth underneath instead of true gills. This is what gives them their name and also makes them super adorable. They have an incredible earthy, buttery, apricot-like flavor with a hint of pepperiness. That’s not all though, Hedgehogs are high in protein, iron, zinc, magnesium, fiber, and calcium. Just soak your Hedgehog in warm water to reconstitute. (We recommend that you save the water - it retains a good amount of the Hedgehog's flavor, and makes a great stock for soups. Just be sure to strain it through some cheesecloth or a paper towel first. This liquid should be cooked thoroughly just as the mushrooms should.) They can be sautéed and eaten on their own or as a welcome ingredient in a number of dishes.
