Lobster mushrooms (Hypomyces lactiflourum) are named both for their bright coloring and amazing seafood flavor that intensifies when the mushroom is dried. This mushroom doesn’t actually grow out of the ground as itself, as it is created when a parasitic fungus called Hypomyces hosts on Russula and Lactarius mushrooms. That’s part of the reason that Lobster Mushrooms are so rare, aside from only being found during certain seasons and in certain places. They cannot be reliably farmed. 

Lobster mushrooms are prized not only for their sweet, nutty, sea-food flavor (reminiscent of real lobster) but also for their rich pigment, which can be used as a natural dye. These mushrooms are high in iron, copper, calcium, antioxidants, beta-glucans, and beneficial polysaccharides. Great, low-calorie way to add color and flavor to your meals.
