This species is truly delicious and our farmers market customers and chef clients just can’t get enough of em. They’re extremely versatile in the kitchen and they can be used in many recipes as a meat substitute, topping, side dish, etc. They are great sliced thick and grilled. We like to say these mushrooms are perfect for those who “don’t like mushrooms” due to their clean and approachable flavor. Breaded/fried or tempura seems to be the favorite method of preparing these varieties.
Soak in warm water for 15-30 minutes, or until fully rehydrated.
Pro Tip: Strain the liquid through cheese cloth and add it to stocks, soups, sauces, etc.
