Lobster is one of the most interesting fungi because its actually a parasitic mold that attacks wild mushrooms, enhancing flavor and strengthening their structure. When Hypomyces lactifluorum attacks it covers the mushrooms in a bright orange skin, creating a dense and buttery mushroom that physically resembles a lobster tail.
An easy way to remember how to cook this one is to say that it's a "white wine" mushroom- meaning it will work in any dish that employs or pairs well with white wines. Seafood, lemon, light pasta sauce, chicken, the list goes on and on!
These mushrooms were harvested here in the USA in the 2020 season. Each package is marked with the state of origin (sorry, can’t tell you where the secret spots are!)
