Dried Matsutake Mushrooms

Tricholoma matsutake, or just Matsutake have been highly prized in Asia, especially Japan, for thousands of years. They are still given as upscale gifts today, they symbolize the return of fall and longevity. Most of the wild harvested Matsutake in the US is exported for sale to overseas, especially as they are becoming harder to find in Asia due to environmental reasons. Pound for pound, this the most expensive culinary mushroom in the world (truffles aren’t true mushrooms)! This mushroom only grows in cooler/ cold weather pine forests in Asia and the Western US during the fall season.

Matsutake mushrooms aren't only prized for their flavor and rarity though, they also have a lot of nutritional value, high in antioxidants (A, C, D, and B-complex vitamins), copper, beta-glucans, polysaccharides, potassium, iron, protein and phosphorus while being low calorie. A little goes a long way with these shrooms, as they have a strong, rich, earthy flavor with hints of pine.

Just be sure to strain it through some cheesecloth or a paper towel first. This liquid should be cooked thoroughly just as the mushrooms should.) They can be sauteed and eaten on their own or as a welcome ingredient in a number of dishes.
